The one thing the deer haven’t eaten…. yet
The basil in the garden is lush and green and oh, so happy. This weekend it was time for its first “haircut” – pinching back the leaf clusters so that the plants will grow bushier – and already they’ve sprung back and will be ready to yield more in a few days.
I plucked – I think – about 1 pound from about 25 plants, or a bit less. Pureed with as little water as possible and patted into oiled ice cube trays, I got 16 little 1-ounce ice-cubes of pure, fresh, summery basil flavor with which to flavor up my drab winter fare.

So wow, how do you thaw/use the basil? all at once, or one or two at a time? help me out here.
wish I had a bigger freezer…guess I must first use some of the apple slices I froze from our tree last year, huh?

I use a cube here and there. Each one equals out to about 1/4 cup of minced fresh basil, so one cube is plenty for a bag of frozen corn, or maybe two would be great in spaghetti sauce.

Lucky dog! My basil is just starting to get happy, they are still only about 2/3 inches high. Don’t worry we will have loads of extra tomatoes;)
