Salsa verde

Yum yum yum! Green tomatoes from one friend, tomatillos & jalapeƱos from another, together with the last of my homegrown red onions made two pints of delicious garden salsa to spice up winter months.

I roasted about 2 pounds of fruit under the broiler. (I could have gotten more green tomatoes from the garden, and I would have if I’d ever yet gotten a red tomato from them… but I don’t want to give up a single one!)

I just happened to have a big bunch of cilantro and plenty of lemons in the fridge too – perfect! Add garlic, salt, cumin, and oregano, and voila.

    Nope, it’s really a very simple sauce. Green tomatoes, tomatillos, onions, cilantro, lemon/lime juice, cumin, salt. I think that’s everything!
