I only just bottled my second batch of cider. I’d pressed it in October, but I was waiting for it to clarify before bottling this time. Heh – no such luck, even though I left it for three months instead of 3 weeks. I got worried about it sitting there for so long and decided to go ahead and bottle it anyway – I hope it doesn’t get any off-flavors from sitting on its yeast for so long. Those stayman apples rendered less than four gallons, about 37 bottles. I wish I could remember what the starting gravity was, so I could calculate the alcohol content!
So now I have to think of names and make a label for the batch. I’m thinking 7 month brew since that’s how long I’ll have to wait to be able to drink it.
