Seasonal supper – roast chicken

Roast chicken is something that’s seasonal year-round; all that’s needed to make it a fully seasonal meal is to add an appropriate side dish! How’s about a summery caprese salad and some whole wheat bread?

Homegrown: chicken, jam, tomatoes, basil. Staples: flour, spices, olive oil. Storebought: milk, butter.

I made the mozzarella with storebought milk, but the basil and tomatoes are from our own garden. The chicken is homegrown, too! And sooo delicious! We spread the bread with homemade grassfed butter and this Spring’s strawberry jam.

Caprese salad

  • fresh heirloom tomatoes (ones that have never been refrigerated)
  • fresh mozzarella
  • handful fresh basil, julienned
  • kosher or seasoned salt
  • very high quality olive oil

Slice the tomatoes and alternate with slices of mozzarella. Sprinkle lightly with salt of your choice and then the basil, then drizzle generously with the olive oil.
