Breakfast on the go
We’re always rushing in the mornings, so when I was cruising Pinterest with Sofía during today’s snow day and we saw an idea for little baked individualized pancakes, we decided to go ahead and do it.
I mixed up some gluten-free pancake batter with extra butter to make it more liquidy, and filled greased muffin tins. Then I gave Sofía little bowls full of chopped up bacon, Christmas sprinkles, frozen blueberries, bits of cheese, and rainbow jimmies and let her go to town.
I didn’t expect her to use them together!
We baked them at 350 for 12 minutes, and they didn’t look any more appetizing afterwards. To me, at least… But I’m not a four year old.
Oh well, as long as I don’t have to eat them, right?
We ate some of them for lunch and then packed the rest into a big freezer bag. Breakfast for the next two weeks, done!
